Ingredients:

  • 1 Cup Semolina (Sooji)
  • 1 Cup Sugar
  • 1/2 Cup Ghee
  • 2 Cups Water
  • 1/4 Cup Chopped Nuts (Cashews, Almonds, Etc.)
  • 1/4 Cup Raisins
  • 1/4 Tsp Cardamom Powder
  • 1/4 Cup Milk (Optional)
  • 1/4 Tsp Saffron Strands (Optional)

Instructions:

1. Heat Ghee In A Pan Over Medium Heat.
2. Add Semolina And Roast Until It Turns Golden Brown And Aromatic.
3. In A Separate Pan, Bring Water To A Boil And Add Saffron Strands If Using.
4. Slowly Add The Boiling Water To The Roasted Semolina, Stirring Continuously To Avoid Lumps.
5. Add Sugar And Cook Until The Mixture Thickens And Starts To Leave The Sides Of The Pan.
6. Stir In Cardamom Powder, Nuts, And Raisins.
7. If Using Milk, Add It At This Stage And Cook For Another 2-3 Minutes.
8. Serve Hot Or Warm.

Ghee-Fried Vegetables

Ingredients:

  • 2 Cups Mixed Vegetables (Carrots, Bell Peppers, Beans, Etc.), Chopped
  • 2 Tbsp Oil
  • 1 Tsp Cumin Seeds
  • 1 Tsp Mustard Seeds
  • 1/2 Tsp Turmeric Powder
  • 1/2 Tsp Red Chili Powder
  • 1/2 Tsp Garam Masala
  • Salt To Taste
  • 1 Tbsp Chopped Coriander Leaves (Optional)

Instructions:

1. Heat Oil In A Pan Over Medium Heat.
2. Add Cumin Seeds And Mustard Seeds. Allow Them To Splutter.
3. Add Chopped Vegetables And Stir-Fry For A Few Minutes.
4. Add Turmeric Powder, Red Chili Powder, Garam Masala, And Salt.
5. Continue To Cook, Stirring Occasionally, Until Vegetables Are Tender And Cooked Through.
6. Garnish With Chopped Coriander Leaves If Using.
7. Serve Hot As A Side Dish Or Light Main Course.
